I am so proud - I made my first home made mayo and it turned out great.! 1 large egg, 1/2 tsp dry mustard, 1 tsp fresh lemon juice - whirl in food processor and then add drips at a time 1 cup of oil - I used a blend of 3/4 cup macadamia nut oil and 1/4 cup olive oil and it turned out WONDERFUL!! I used it in a broccoli salad - it made 1 cup of mayo and I added 6 T. Bragg cider vinegar, 3 scoops KAL stevia and made a dressing out of it. I chopped up 2 large heads of broccoli and 1/4 of a large red onion. Mixed it all well and let it set overnight and then this morning I added 8 pieces of crispy bacon to it! It was an awesome salad and gets better and better the longer it sits! I will also use this mayo for salad dressing - it was super easy to make too!

I was afraid it would go back solid is why I invested in Macadamia oil. Now I will have to try CO since you have encouraged me! Thanks!

Gwen, I am going to try your version of mayo. I have been making mayo for a while, but use olive oil, which hubby likes , but not me.

Maile, your version sounds really good too and I have CO and a light version of olive oil on hand, so I am going to give your version a go. Thanks for sharing!

Mayo is one thing I haven't tried making yet. I've been using Trader Joe's with canola oil and no sugar. I don't use much, only in tuna salad, and DH doesn't like mayo at all. How long does homemade stay good? A few days?

Last time I made it, I think my recipe only called for the egg yokes. It's on my list of things to start making more regualarely once I figure out what Kruse would approve in it!! |
